Carrot croquettes

INGREDIENTS:

For 4 people
4 grated carrots
1/4 Onion, finely chopped
2 tablespoons Parsley, finely chopped
1 egg yolk
3 tablespoons ground oats
1 cup milk
1 tablespoon oil
TO EMPANIZE
1 cup flour
2 eggs, shakes
1 cup Panko
1/2 liter oil
1 cup Guacamole
Salt and pepper to taste


DIRECTIONS:

COOL the onion and add the carrot. COOK for 5 minutes over medium heat. ADD the oatmeal and cook for 5 minutes. Move constantly. Pour the milk and pepper. KITCHEN while still moving for 10 more minutes. ADD the yolk and mix quickly. Rectify seasoning. KITCHEN for 5 minutes while still moving. REMOVE from heat and spread on a tray. Let it cool.

TO EMPANIZE SHAPES the croquettes.PASS through the flour and the beaten egg, and breach with the panko.FRÍE in the hot oil until golden brown.CREW on absorbent paper.SERVE and accompany with guacamole
